Guadalajara farm is located in the community of El Meson within the municipality of Garzon, Huila - the largest coffee producing region in Colombia. In Garzón there are nearly 7,000 multi-generational coffee farms and almost a half of the agronomic income of the region comes from green coffee production. Here the coffee is harvested twice a year – once during the main harvest in September – December and the mid-crop in April - June (also known as mitaca).
The Huila region lies near the highest Volcano in Colombia - Nevado del Huila. The mountainous terrain provides fertile volcanic soils and high altitudes with large day-night swings in temperature. This slows cherry maturation leading to very intense, sweet and complex cups. Thanks to this Huila is renowned for the quality of its coffee all over the world. It
regularly produces Cup of Excellence-winning lots. And in 2013, it received Denomination of Origin status.
Most of the farms in the region are small approx. 1-3 ha. Mainly they have their own processing facilities, both wet mills, where the coffee is pulped, fermented and washed, and space for drying the coffee.
Pink Bourbon is a cross between Yellow and Red Bourbon produced by coffee farmers around Huila. It has greater resistance to leaf rust than either the yellow or red variety and boasts spicy- jasmine notes and a hint of caramel in the cup.
